Broiled Salmon with Lemon Cream Sauce

This is another regular around here. I served this at Christmas dinner last year. It was a home run. Best of all, it doesn't require any prep work. Woohoo for easy dinners! For those of you that don't like salmon, try it like this. I have converted many a nonbeliever. It turns out mild and the cream sauce compliments it nicely.

Here's what you need: Salmon (get it frozen at Costco, the cheap one, from the Atlantic, the expensive one does not turn out as well), lemon juice, cooking spray, seasoning salt, and parsley (I have another spice pictured, it didn't turn out that great, so I'll be sticking to my original recipe)


Line your broiler tray with foil, drizzle lemon juice on frozen salmon, spray with cooking oil, sprinkle on seasoning salt and parsley


Broil, from frozen, for 10 minutes. Let's talk about broiler height. You want the top of the food to be about 5 inches from the heating element--too high and it will burn, too low and it won't brown properly. And most importantly, my oven isn't dirty, its loved.


After the 10 minutes, take it out, flip it over and redress the other side


Broil for another 10. While it is cooking, start steaming your veggies and let's get this cream sauce started! You need: butter, flour, water, chicken bullion, salt, heavy whipping cream, and lemon juice


Melt the butter in a small sauce pan on low heat (2 on my electric stove)


 While it is melting, pop the water in the microwave for 1 minute, then add in the salt


Then the bouillon


When the butter is completely melted, add in the flour and mix well


Cook it for about 5 minutes. Don't leave the stove, keep stirring!

After 5 minutes, you can slowly add the water/salt/bouillon, mix it well to avoid lumps (if you get lumps you can bust out with a whisk, or an immersion blender!) 


After it is lump-free, add the whipping cream

  

Then the lemon juice


The sauce is done. Around this time the veggies and the salmon should also be done


Serve the sauce over the salmon, or on the side


Good stuff.

Salmon Ingredients:
  • Frozen salmon
  • Lemon juice
  • Cooking spray
  • Seasoning salt
  • Parsley
Directions:
  1. Place frozen salmon on lined broiler tray, drizzle with lemon juice, spray with cooking oil, sprinkle with seasoning salt and parsley
  2. Broil for 10 minutes
  3. Flip over and repeat

Lemon Cream Sauce Ingredients: Halve the recipe if making fewer than 4 servings of salmon
  •  2 Tbs butter
  • 2 Tbs flour
  • 1 cup water
  • 1 tsp salt
  • 1 tsp chicken bouillon
  • 1/2 cup heavy whipping cream
  • 1 Tbs lemon juice
Lemon Cream Sauce Directions:
  1. Melt butter in small sauce pan on low heat (2 on electric stove)
  2. Warm up water in microwave for 1 minute, add salt and chicken bouillon
  3. When butter is melted, add flour, stir continuously, cook for about 5 minutes 
  4. Whisk in water/salt/bouillon
  5. Stir in whipping cream
  6. Stir in lemon juice
